Blueberry Muffins


1/2 cup caster sugar
1 tbsp. lemon zest
9 1/2 oz. all-purpose flour
1 tbsp. baking powder
2 eggs, lightly beaten
1 cup milk
1/2 cup (1 stick) unsalted butter, melted
1 tsp. vanilla extract
1 cup blueberries

Preheat the oven to 400 degrees F.

Place 12 baking cups in a muffin pan.

Stir together the sugar, lemon zest, flour, and baking powder with a wooden spoon.

In a separate bowl, beat the eggs, milk, butter, and vanilla with an electric mixer until smooth. Add the flour mixture. Stir until combined.

Scoop the batter into the baking cups.

Bake for 20 minutes.

Cool on wire rack for about 5 minutes before serving.

Best eaten warm.

* Either fresh or frozen blueberries works fine. Make sure to thaw the frozen blueberries first before using.
