Chocolate Chip Muffins


1/3 cup soft margarine
1 cup caster sugar
2 large eggs
2/3 cup plain yogurt
5 tbsps. milk
2 cups all-purpose flour
1 tsp. baking soda
3/4 cup dark chocolate chips

Preheat oven to 375 degrees F.

Line a 12-cup muffin pan with baking cups.

Beat the margarine and sugar in a large mixing bowl until light and fluffy. Beat in the eggs, yogurt, and milk until combined.

Sift the flour and baking soda together and add to the mixture. Stir until blended.

Mix in the chocolate chips.

Spoon the mixture into the baking cups.

Bake for 25 minutes or until a toothpick or fine skewer inserted into the center comes out clean.

Leave to cool in pan for 5 minutes, then turn out onto a wire rack to cool completely.
