3/4 cup unsalted butter
1 cup brown sugar
1 tsp. vanilla extract
1 egg
3 cups all-purpose flour
1 1/2 tsps. baking powder
2 tsps. ground cinnamon
2 tbsps. caster sugar
Preheat oven to 350 degrees F.
Beat butter and brown sugar together in a bowl until light and fluffy. Beat in the vanilla and the egg.
Sift together the flour and baking powder. Add to the butter mixture. Mix well.
Roll out to form a rectangle 4mm thick (less than 1/4 inch).
Combine cinnamon and caster sugar and sprinkle over dough. Roll up like a Swiss Roll, starting from one long side. Wrap in plastic wrap and refrigerate until firm.
When ready to bake, unwrap the roll and slice thinly (about 3/4 inch).
Place on greased baking sheets and bake for 10 to 15 minutes or until golden brown.
Cool for about 10 minutes on the baking sheets before transferring to a wire rack to cool completely.
