10 1/2 oz. semi-sweet chocolate, chopped
10 1/2 oz. unsalted butter
5 eggs
1/2 cup sugar
1/2 cup all-purpose flour
3/4 tsp. baking powder
1/4 tsp. salt
2 tbsps. cocoa powder, to dust
Preheat oven to 325 degrees F.
Line muffin pan with 12 baking cups.
Melt the chocolate and butter together in a double boiler. Let cool.
Beat the eggs and sugar together until pale in color.
Sift together the flour, baking powder, and salt. Fold into the egg mixture. Add the melted chocolate mixture. Mix until well blended.
Scoop the batter into the baking cups.
Bake for 20 minutes.
Cool the cupcakes in the pan for 5 minutes.
Remove from the pan and dust with the cocoa powder.
