Vanilla Cupcakes with "Lemony" Butter Frosting

cupcakes:

1 cup unsalted butter

1 cup sugar

1 cup all-purpose flour

2 1/2 tsps. baking powder

1/2 tsp. salt

4 eggs

1 tsp. vanilla extract

frosting:

1/2 cup unsalted butter

1 cup powdered sugar

1 tsp. vanilla extract

1 tbsp. lemon zest

Preheat the oven to 350 degrees F.

Place 18 baking cups in muffin pans.

Combine all ingredients for the cupcakes in a large bowl and beat with an electric mixer for about 3 minutes until smooth and pale. 

Portion the batter into the baking cups.

Bake for 20 minutes.

Let cool for 5 minutes before removing from pans to cool completely on a wire rack.

Meanwhile, prepare the frosting by beating the butter, powdered sugar, vanilla, and lemon zest until smooth.

Using a spatula, spread the frosting on top of the cooled cupcakes.
